Gil was a fiercely loyal, loving, and protective husband, father, brother, friend, and boss. He enjoyed spending time on Lake Champlain with his family, boating and jet skiing. He loved to play golf and watch movies with his children. He was an active member of Friendship Masonic Lodge no. 53 F&AM and the Ocala Scottish Rite. He was also a very active member of Christ the King Anglican Church, and could often be found in the kitchen cooking a meal for Wednesday nights, or Sunday evening services. He loved cooking for his family and friends to gather together and have fellowship.

Gilbert was preceded in death by his loving parents, Clinton A. Baxter (2002) and Palestine Gilbert Baxter (1996), brother-in-law Clemente Hurteau (1996).
